Ingredients:

  • 1/2 cup quinoa

  • 1 cup water

  • Juice drained from canned tomatoes, about 1/4 cup

  • 1/2 cup canned tomatoes

  • 1 teaspoon basil

  • 1 teaspoon oregano

  • 1 Tablespoon butter

Directions:

  • Put quinoa and water in pot.

  • Add butter.

  • Set to high.

  • Once butter is melted, stir.

  • Add tomato juice, tomatoes, and seasonings. Stir.

  • Cover pot with a lid.

  • Boil on high until boiling.

  • Reduce heat to low.

  • Cook for 20 minutes on low.

    (Adjust for humidity levels)
